Look at Samsung's Galaxy marketing and the clock almost always reads 12:45 — the same way Apple's always reads 9:41. It is a deliberate house convention, applied across ads, product pages, and press images. The two numbers make a neat pair, with one asymmetry worth knowing about: only one of them has ever been explained.
The convention
Pull up a Galaxy product page or launch video and check the lock screen: 12:45, over and over, across years of devices and regions. Like any marketing time, it does useful work — every render of the phone agrees with every other one, and a fixed time keeps the clock from accidentally implying anything (a photo "taken" at 3am tells a story whether you meant it to or not).
Apple explained its number. Samsung never has.

A mockup reads as authentic when its details match the platform, and the clock is one of those details. The Samsung tools here default to 12:45 for exactly that reason, and the iPhone tools default to 9:41. Both are editable — the default is just the right starting point.
Does the exact time actually matter?
For most screenshots, no — any plausible time works, and nobody will audit your status bar. It matters at the margin: marketing-style imagery, side-by-side platform comparisons, or anything an audience of designers will look at closely. There, matching each platform's own convention is the cheapest realism available.
